Balinese cuisine is one of Indonesia's most complex and flavourful regional food traditions, built on a foundation of fresh spice pastes (base genep and base rajang) that combine galangal, turmeric, lemongrass, shallots, garlic, chilli, and shrimp paste. A cooking class in Bali is far more than a recipe lesson — it is an immersive cultural experience that begins at the source, with a visit to a bustling traditional morning market where your chef-instructor explains the ingredients and helps you select the freshest produce.
Ubud is the epicentre of Bali's cooking class scene, with dozens of schools set in stunning locations amid rice paddies, river valleys, and tropical gardens. Classes typically run either as a morning session (8 AM to 1 PM, including market visit) or an afternoon session (1 PM to 6 PM, garden tour instead of market). You will learn to prepare 5 to 8 dishes, including staples like nasi goreng (fried rice), sate lilit (minced seafood satay), lawar (chopped salad with grated coconut), and bebek betutu (slow-cooked duck in banana leaf).
Most cooking schools provide individual cooking stations, so every participant prepares each dish themselves rather than watching a demonstration. The hands-on approach means you leave with genuine confidence to recreate the dishes at home. Printed or digital recipe cards are provided, and many schools now offer video tutorials as a follow-up. Vegetarian and vegan menus are available at most schools upon request, substituting tofu, tempeh, and mushrooms for meat dishes.
